STYLE
A medium to full bodied wine of immense drinkability. Juicy berry flavours balanced with fine tannins and subtle oak.
VITICULTURE
The fruit for this wine was sourced off our winery vineyard. Soil profile is brown to red loam over limestone. Yield was 1.3 tonnes/acre.
VINIFICATION
The vintage eventually settled in to a run of consistent warm days followed by cool nights. This pattern of weather helped to give a deep garnet hue and definitive Cabernet Sauvignon varietal characteristics. The grapes were harvested in early April and fermented on skins through to dryness in static stainless steel fermenters. Traditional basket pressing has given the wine a good mid palate structure and length of flavour. 14.5% alc/vol
TASTING NOTES
This Watervale Cabernet Sauvignon was sourced off our own winery vineyard. Exciting mulberry/cassis and elevated herbaceous aromas are prominent on the nose. Juicy berry flavours give depth to the mid palate balanced with fine tannins and underlying oak. This round and evocative style is a result of time honoured basket pressing, finishing with good length of flavour. Cellaring potential of 6-8 years.
