Description
Mudgee, NSW
Variety
60% Cabernet Sauvignon
40% Merlot
Vintage Conditions: With a high rainfall growing season, we had to work hard in the vineyard to retain quality. Leaf plucking and fruit thinning was essential, and we were lucky to have a good week of sunshine just before harvest.
Winemaking: This is the first ever Saignee we have tried to produce, and an exceptional year to try it with. Bleeding off fresh juice after 6 hours on skins, into new French Oak hogsheads for wild fermentation. High lees contact for 4 months adds complex palate weight and texture.
Tasting Notes: Our 2014 Saignee was made by extracting freshly crushed grape juice from our Cabernet Sauvignon and Shiraz grapes. The juice was then allowed to ferment in 100% new French Oak Hogsheads, producing a Rose on the more serious side of the spectrum. Aromas of green apple lead to a fresh dry palate with red grapefruit character
